Moving to the next level of Ownership and Sustainable Farming.

2020 had two major highlights for our family business at Compton Family Wines. Retail customers stayed loyal to our products which help keep us going strong as other sales channels drop dramatically. The second highlight is our Estate Vines that was formally named DeerHaven Vineyard and has been renamed Compton Family Farms. Matt and Tabitha were able to purchase the vineyard that they had been leasing for over 20 years. This property is now our homestead for the family and using it for growing wine grapes along with some livestock.

Sustainability in farming has always been our focus in vineyard management but many of these vineyards have been leased which has limited our efforts. Now we are looking to take the sustainability to the next level by developing a more diverse ecosystem with implementing new tools to help grow the grapes under what is known as Regenerative Agriculture Practices. This form of agriculture is managing with more natural tools to the ecosystem of the farm create higher diversity of biology, improve soil health, improve plant health, and improve animal health. Some of our new tools in this management is; a herd of 5 sheep (that are lambing as we write this) for grazing and fertilizing the farm, another tool is over 30 pasture raised chickens to maintain soil health along with controlling insects. We are also looking to introduce more fowl such as geese and ducks to help with grazing and fertility of the vineyard land. The animals introduced to the vineyard help keep the grass down, so we do not have to mow along with fertilizing the land.

2020 brought many new challenges to the business and life but by looking to work with Mother Nature we will find the ways to get back to better systems.

A crisp aperitif for summer sipping, or pair with grilled halibut, new potatoes, and thick slices of home grown heirloom tomatoes.

Earthy and fresh with aromas of crisp wild strawberry and a hint of lily.  Delicate mouth feel of gala apple and a pretty soft hint of watermelon. Great freshness from the newest vintage and it is focused with good structure.

Ham and Cabbage Casserole

Recipe by Matt Compton
A tradition in our family, made from winter vegetables from the garden and ham, corned beef, or kielbasa.

Ingredients

  • Head of cabbage cut into wedges; core removed
  • 3 cups of ham, cubed; or corned beef, ham on the bone; or kielbasa sliced thick
  • 1 stick of butter (optional). If you don’t use butter then add the broth below.
  • 1-2 cups of broth (this can be chicken broth or broth from a cooked ham bone). Cabbage will produce a lot of juice too. I don’t add as much and add more if needed.
  • Black pepper & salt (careful with salt, ham could be salty)
  • Red or white potatoes, cleaned and cut in half
  • Carrots, cleaned & peeled (cut or leave whole if using baby carrots)-(optional)

Instructions

  • Layer the cabbage in the bottom of a crockpot or Dutch oven; topped with the ham, or kielbasa; butter and black pepper.
  • Bring to a boil, then cook low all day. (crock pot cook at medium all day) Potatoes and carrots, are added later and cooked until fork tender.  Add broth to taste as needed. Serve with crusty bread to dip.

Note – This recipe can also be used for corned beef brisket and cabbage; just cover the meat with water, add the included spice pack; bring to a boil then simmer for 50 minutes per pound until tender. Add the cabbage, potatoes and carrots and cook until tender. Remove brisket to rest for 15 minutes, then slice. Great served with a hearty mustard on the side; and of course, crusty bread!

Buffalo Cauliflower

When you want a crowd pleasing appetizer that everyone will eat, my Buffalo Cauliflower recipe fits the bill. These are mega-tasty and healthy too, without guilty calories and bad-for-you animal fat. Buffalo Cauliflower bites go with summer parties, football games, and anytime you want some cauliflower that’s fun. – Veronica

Ingredients

  • 1 cup almond milk
  • 1 cup gluten-free flour
  • 2 tsp. garlic powder
  • 1 head organic cauliflower, washed & chopped
  • 1 cup hot sauce
  • 1 tbsp. cold-pressed olive oil

Instructions

  1. Preheat oven to 425°F.
  2. Mix milk, flour, garlic powder in a bowl and mix well.
  3. Add cauliflower to the bowl and cover with the mix.
  4. Place on a baking dish and bake for 20 minutes.
  5. While cauliflower is baking, make the buffalo sauce by adding the hot sauce and olive oil in a small bowl.
  6. Remove cauliflower and pour the buffalo sauce over the cauliflower and continue to bake for 5 minutes.
  7. Serve with mayonnaise and sliced organic celery sticks.
